McEnroe Organic Farm | Millerton, NY
Ray and Erich McEnroe, Farmers
PBC’s delicious beef comes from the McEnroe Organic Farm and farmers, Ray and Eric. The farm has been NOFA-NY Certified Organic for over 25 years and it is one of New York’s oldest and most diverse organic farms.
All livestock are pasture-raised and they never use added hormones, antibiotics, or genetically-modified seed for livestock feed.
-

D'Artagnan Green Circle | Pennsylvania
D’Artagnan supplies all of PBC’s chicken. Their network of small Amish and Mennonite family farms in Pennsylvania raise chickens the old-fashioned way. The chickens are fed clean surplus vegetables from markets along with wholesome, regeneratively grown grains that include corn and soy.
Green Circle chickens enjoy more than twice the barn space required to be considered free-range, they have year-round access to the outdoors and the ability to forage naturally and are raised to 8 weeks of age, as opposed to 5 or 6 weeks, which is standard for commercially-raised chicken.

Gibson Family Farms | Valley Falls, NY
Dustin and Kassie Gibson, Farmers
Gibson Family Farms is one of our two pork providers, raising heritage Berkshire hogs. They also provide our lamb, sending us Dorper and Rambouillet sheep.
Their mission is to practice sustainable, responsible, and natural farming, resulting in long-term growth and regeneration. The animals graze rotationally, helping soil growth and providing variety for the animals.
